CARROT SANDWICH

HEALTHY AND QUICK CARROT SANDWICH :

INGREDIENTS:

Carrots - ¼ kg, Onions – 2, Ginger, green chilli paste – 2 tsps, Tomatoes – 2 , Chopped mint, Coriander, Curry Leaves 2 – Tbl sps, Salt as required, Oil for frying, Bread Slices – 10.

PREPARATION METHOD :

1. Steam cook carrots an then grate it.
2. Chop onions and tomatoes finely.
3. Heat little oil and little mustard and then ginger chilli paste.
4. After a minute add onions and fry till crisp.
5. Stir in tomatoes and continue frying till moisture is absorbed.
6. Add grated carrots, salt, chopped leaves and fry well.
7. Keep little masala in between two buttered slices of bread. Toast it using sandwich maker.
8. Serve with mint chutney or tomato ketchup.
After frying this can be ground like a chutney and used as a sandwich spread. HEALTHY SANDWICH FOR KIDS.
